Quick and easy cupcakes…

Help! My Teenager has Coeliac Disease

In a rush and need to  cook up a batch of cakes quickly.  Then with a bit of thought, you can turn a cake packet mix into something a little different.

Cupcakes

1 pkt Basco Golden Butter Cake MixLemon Cupcakes

2 eggs

3 tablespoons softened butter/margarine

2/3 cup milk

1 teaspoon lemon zest

60 ml lemon curd (store bought)

Icing

4 tablespoons lemon curd

1 tablespoon lemon juice

50 g sugar

 

Method

Cupcakes

Place all ingredients in a large bowl and with an electric beater, mix on low until all ingredients are combined.

Beat for 2 minutes on medium speed.

Put 1 dessert spoon of mixture into bottom of cupcake papers. Top with 1 teaspoon lemon curd. Top with remaining cake batter.

Bake in a moderate oven 180 C (fan forced 160C) for 15 – 20 minutes until a skewer comes out clean.

Pina Colada Almond Flour Muffins

Great combination of flavours.

Inspired by our trip to Maui, Geoff and I decided to try to make something that would bring together some tropical island flavours. Made with Tahitian vanilla, shredded and ground coconut, and chunks of fresh pineapple, these Pina Colada Muffins certainly do the trick. On top of all that, the almond flour base makes them hearty and the applesauce keeps them moist for days. We will certainly be making these again!   gluten free pineapple coconut muffinsThese are based on the almond flour raspberry muffins we posted earlier. Like those muffins, these should be stored in the fridge and taste even better the next day when the flavours have a chance to meld.

Gluten Free Tiramisu CupcakesIn case you’re not familiar with tiramisu, it is a popular Italian dessert. It is traditionally coffee-flavored, made with ladyfingers dipped in coffee between layers of mascarpone cheese and sugar with chocolate. Tiramisu literally translates as “pick me up”. How perfect is that? Now, lady fingers aren’t generally gluten free unless you search really hard for them and, to be honest, I prefer cupcakes to traditional tiramisu cake.  The recipe is fairly straightforward, so don’t let the multiple steps scare you off! You’ll thank me later!

Cake:

  • 1 cup (2 sticks) butter, softened
  • ½ cup vegetable oil
  • 2½ cups granulated sugar
  • 3 eggs + 2 egg whites, room temperature
  • 3 cups gluten free flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup buttermilk
  • 3 teaspoons vanilla extract
  • 3 packets instant coffee
