Once or twice a week I like to bake something with my 2 year old son. He loves mixing, cracking eggs and, of course, licking the bowl. We originally baked this gorgeous buckwheat loaf to have with breakfast one weekend.  This delicious bread is so good it is now the only bread we eat! We bake a loaf every Sunday.

Gluten free Banana and Pecan bread

Inspired by a recipe for Banana and walnut bread recipe here, I had a go at making something similar using my favourite nuts, Pecans! This recipe is grain, dairy and gluten free

Banana and pecan bread tastes amazing with a little butter or dairy free spread on top while still warm, Mmmmm!

recipe

3 small bananas or 2 large ( ripe) mashed

3 eggs

110 g ground almonds ( almond flour )

70g pecans which i roasted in the oven for about 5 mins with a little coconut oil and ground cinnamon 

1/2 tsp bicarbonate of soda

1 generous tbsp honey ( I used raw honey )

method

Pre heat oven 200c

put pecans, cinnamon and a little melted coconut oil on a baking tray in hot oven for 5 mins ( this is not essential you can just use pecans as they are.

Potato Flatbread – Gluten Free

Fill up your hungry teenagers with this gluten free flatbread.

This Gluten Free Potato Flat Bread is easy to make and tastes delicious. Serve warm with Butter or use instead of a English Muffin for a tasty Eggs Benedict or with Smoked Salmon, Capers and Cream Cheese for a delicious Gluten Free Gravlax.

Ingredients 

1 Large or 2 Medium Russet Potatoes

1/4 Cup Melted Butter

1 Egg

1 Cup Rice Flour

1/4 Cup Corn Starch

2 Tsp Baking Powder

1/2 Tsp Salt

Directions 

1. Cook then mash the potatoes, then set aside to cool.

2. Stir in the melted butter and the egg. Mix until smooth. Then add the rice flour, corn starch, salt and baking powder. Mix until a smooth dough forms. Wrap the dough ball in plastic wrap and place in the refrigerator for 1/2 hour.

3. Pre heat oven to 450 F.

Mini Burgers – Gluten Free

These Delicious Mini Burgers are made with Mini Gluten Free Biscuits.  They are quick and easy to make, with no waiting around for dough to rise.

Ingredients

For the Biscuits – 

1 1/2 Cups Rice Flour

1/4 Cup Corn Starch

3 Tsp Baking Powder

5 Tbsp Butter

3/4 Cup Milk

1/4 Cup Cheddar Cheese – Shredded

For the Burgers – 

1 LB Ground Beef

1/4 of a White Onion – Minced

1/4 Cup Gluten Free Bread Crumbs or Gluten Free Breton Cracker Crumbs

1 Tbsp Gluten Free BBQ Sauce

 Directions 

1. Pre heat oven to 450 F

2. In a large bowl, cut butter into flour, starch and baking powder. Mix until well combined.

3. Add milk and mix until a dough forms.

4. Using a rolling pin, roll out dough on a floured surface. Using a small round cookie cutter or a small cup, cut out biscuits.

I’ve always liked a good bit of bread, especially the flat kind. It’s always been hard to find decent gluten free bread though that’s still pretty health promoting, and doesn’t break the bank. So I decided to come up with my own.

I’ve been working on this one for a while now, and think I’ve just about got it nailed down. Aside from being really easy to make, the great thing about this bread is its versatility. Whether you want a normal flatbread, an Indian naan, or an Italian pizza base; all it takes is a few simple adjustments to the recipe.

Don’t be too worried about exact quantities with ingredients, I’m certainly not and it usually turns out fine…

Cornbread – from the USA program

½ polenta

1 ½ cups SR flour (substitute gf flour)Corn Bread

½ cup caster sugar

Pinch of salt

½ cup melted butter

3 eggs

1 cup creamed corn

1 cup full cream milk ( no fat milk is ok)

  1. Mix polenta and sr flour, salt, melted butter and eggs.
  2. Add creamed corn and milk.  Mix until you get a nice creamy consistency.
  3. Spoon the mixture into a greased Texan muffin tray and bake in a preheated oven at 180  for 15 – 20 minutes or until golden brown in colour.
