I had one of those days today and by the end of it all I wanted to do is come home and bake. Luckily I got a few really good new recipe books over Christmas, which I will be reviewing over the next few months, and I was able to whip up these coconut and lime bundtlettes really quickly. I was also able to test out my two new baking trays as an added bonus.
I chose this recipe from Cake by Rachel Allen because it sounded so light and healthy after all the Christmas rubbish I have eaten. I made them gluten-free and also dairy free by omitting the milk and adding a little extra coconut milk instead.
