Spiced Rice and Chickpea Soup

Easy to make on short notice as all ingredients are pantry items.

A favourite winter warmer or perfect for a light weekend meal.


1 tablespoon olive oil

1 brown onion, chopped

3 cloves of garlic, crushed

2 teaspoons ground cumin

2 teaspoons ground coriander

1/2 cup arborio rice

2 x 400 g cans crushed tomatoes

1.5 litres gluten free chicken stock

1 x 400 g can chickpeas, rinsed and drained


1. Heat the oil in a saucepan over medium heat then add the onion and cook for 5 minutes or until softened.

2.  Add the garlic, cumin and coriander and cook for a further minute.

3. Add the rice, tomatoes an stock and cook for 25 minutes or until the rice is al dente.

4. Add the chickpeas and cook for 1 minute or until heated through.

5. Serve.

Apple Cider Donuts (g/f)

For christmas I was given two donut pans, an absolutely delightful gift considering that donuts aren’t such a big thing over here. I was keen on giving donuts a go as soon as possible, but I was stuck for recipes. I wanted to do something straightforward, but which would also be delicious, and would be great to share with friends. I scrawled through a few sites, and finally landed upon a delish looking recipe from Gluten Free on a Shoestring. I resolved to give this recipe a go, and was more than a little bit surprised at how well it went down.

Tuna Noodle Casserole!

A quick and delicious meal.

Gluten Free For Yummies


Tuna Noodle Casserole Recipe

1 Pound Gluten Free Pasta

2 Cans, drained Tuna (in water)

1/4 Cup Parmesan Cheese

1/4 Cup Shredded Mozzarella Cheese

1 Cup frozen sweet peas

1 Can Gluten Free Cream of Chicken soup (or cream of mushroom)

1 Cup of Milk

Salt/Pepper to taste


Preheat oven 400(F)

Cook Pasta, drain

In a separate bowl combine; tuna, peas, soup and milk stir until combined add salt and pepper to taste

Mix the tuna, peas, soup and milk with cooked pasta and pour half of the pasta mixture into a sprayed 9X13 pan

Sprinkle half of the parmesan and mozzarella cheese over the pasta

Add the other half of pasta and the rest of the cheese on top

Bake uncovered 25 minutes or until bubbly 🙂

Creamy Macaroni and Cheese with Goat’s Cheese

Love the combinations of cheese.

macandcheeseFor this macaroni and cheese, I’m using a combination of goat’s cheese, cream cheese and parmesan cheese to make a warming and creamy dinner. The garlic and basil work well together to give it a bit more flavor without taking away from the cheese. I’d been craving goat’s cheese again and this gave me my fix.

2 1/2 cups cooked small gluten free elbow pasta
1/2 medium white onion, diced
2 tablespoons extra virgin olive oil
4 ounces plain goat’s cheese
4 ounces cream cheese, cubed
1/2 cup milk
2 tablespoons dried basil
1 garic clove, minced
3 tablespoons gluten free bread crumbs
1/4 cup fresh shredded parmesan
salt and pepper, to taste

So, I’m actually finding some time to bake once in awhile, especially since I have such a sweet tooth! Thank goodness you have to eat extra calories while you’re nursing! YES! LOL. Hubby’s been busy doing yet another reno project (YAY new laundry, mud and bathrooms on the way!) so I wanted to do something nice to reward him and satisfy my sugar craving all at once, why not make us both happy right?! His fave is snickerdoodles, but i have to be honest and say that GF snickerdoodle cookies suck! LOL I’ve tried alot of different recipes and they always come out flat and too crunchy and it frustrates me, but these……omg, these are to die for! They’re absolutely perfect, soft and chewy and flavorful, but in a bar form. I will warn you, these are super addicting, and we can vouch for that because the whole pan disappeared…
